Grape spirit (literally known as ‘water of life’ for monks researching therapeutic elixirs) can be considered the forefather of modern grappa. The production method has largely remained the same: distil the best chardonnay grape skins in small copper boilers using just the right amount of steam.
White grappa is a product for purists.
