Chardonnay, Pinot Noir.
When they become fully ripe, the grapes are picked extremely quickly, pressed gently and fermented in steel tanks at a controlled temperature of roughly 18 °C. After pressing , some of the Chardonnay is fermented and refined in small wooden barrels.
The cuvee is produced in Spring and the blended wine is put in bottles together with yeasts.
The wine is aged on the yeasts in the bottle for at least 25 months.
Delicate and wide-ranging with traces of yeast and a slight and pleasant hint of vanilla.
Complete, full, charming, and persistent.
Fish, seafood, and delicate first courses. It can also be drunk as an excellent aperitif.
