Once perfectly mature though with a hint of acidity, the Chardonnay and Pinot Noir grapes are vinified separately and fermented at approximately 18 °C. A part of the Chardonnay must is fermented and refined in small wooden barrels.
In Spring a panel of expert tasters decides the cuvée of the millesimato.
The wine is aged on the yeasts in the bottle for at least 36 months.
Fully developed in which tertiary aromas predominate.
Full, it shows the elegance and refinement that can only be achieved with time. That’s the reason why it can be included within the best wines produced in the district of Franciacorta.
