The name acquavite - the water of life - cames from the Middle Ages by monks seeking for medicinal elixirs: it can be considered as the forerunner of modern “grappa”, although the production method has remained largely unchanged over the centuries: distillation of the very best Chardonnay “vinacce” (dregs of pressed grapes). The use of small copper boilers and a wise and controlled use of steam are the secrets in making.

The white grappa is a product for purists.
