BRUT

 

A wine with a clear personality, well defined, but with something that’s enigmatic. It’s enveloping, dry, and determined.

 

GRAPES
Chardonnay about 90%, Pinot Noir about 10%

WINE-MAKING
When they become fully ripe, the grapes are picked extremely quickly, pressed gently and fermented in steel tanks at a controlled temperature of roughly 18 °C. After pressing , some of the Chardonnay is fermented and refined in small wooden barrels.

BOTTLING
The cuvee is produced in Spring and the blended wine is put in bottles together with yeasts.

REFINEMENT
The wine, not vintage, is aged on the yeasts in the bottle for at least 30 months.

BOUQUET
Delicate and wide-ranging with traces of yeast and a slight and pleasant hint of vanilla.

TASTE
Complete, full, charming, and persistent.
